Khinkali are the beloved dumplings of Georgia — hand-pinched parcels of dough filled with seasoned meat and herbs, each enclosing a pocket of aromatic broth that forms during cooking. At Saperavi Georgian Restaurant in Winnipeg, our Khinkali are made fresh daily by our Georgian kitchen team using a traditional recipe that has been perfected over centuries in the mountain regions of Georgia.
The art of eating Khinkali is part of the experience: you hold the dumpling by its twisted top knot, take a small bite from the side, slurp the hot broth, then eat the rest of the dumpling. The top knot is traditionally left on the plate as a count of how many you've enjoyed. We offer both the classic meat filling with beef and pork, and a mushroom version for vegetarians — making this a dish everyone at the table can share and enjoy.
